What to do with cod loin?

Hi
I could really do with some easy and quick ideas to liven up cod. I've run out of inspiration. I normally bake it with lemon and herbs.
low fat recipes would be very welcome as i get married in 8 weeks and havent lost a single pound yet!...

wrap it in proscuttio and bake it
or make cerviche - Central American marinated raw fish
Lemon juice, salt, coriander and a finely chopped red onion, lime juice may be more authentic though

Is cod still and endangered species?

And where is MN cod these days, or has she just stopped being gobby?

Jamie has one where you put it in a baking dish with cherry toms choped in half, some srtips of mozzarella, back pepper, basil, oilive oil, lemon juice - bake for erm probably 20 mins. Really nice and so easy - lovely with new potatoes

fish pie? not sure how to make it low fat though maybe a half fat creme fraiche instead of the bechamel would work. Did salmon in parma ham last night for kids and was yummy

Thanks for suggestions - I had a look in a Jamie oliver book and ended up doing cod with a aparmesan crust. It was lovely. not at all slimming though .Will definately try the parma ham and other ideas. Cheers!
