How do you make macaroons perfectly round and uniform?

Mine always turn out bigger and flatter than the shop bought ones.

You can get macaron baking trays with little rounds on, they encourage them to be a particular size. The rest is guess work with some skill thrown in.

You buy a silicone mat from Lakeland that has circle indentations so all your macaroons turn out exactly the same size. If they're too flat, maybe you're over mixing?

I have the macaron tray from Lakeland. It does produce uniform macarons but I find they don't have the "lip" that they usually have.

Bit fiddly but I draw circles on greaseproof paper in pencil and pipe the macaron onto the other side.
