Something new to make with 4 chicken breasts

Just looking in freezer for ideas for tea tonight, got 4 chicken breats but can think of anything inspiring ...and quick and easy...to make with them. In the cupboard I also have tinned toms, carrots, peas, onion, garlic, pots, leeks, sweetcorn, veg stock. Any ideas for family of 4 including 6 yr old and 4 yr old. I usually marinade and grill but just dont fancy that today.

chop chicken breasts into cubes. cook in pan with chopped leeks, garlic,salt and tiny bit of oil. potatos separatly, in pan, on low heat with tablespoon oil, salt and other veg.

Cut into chunks, marinade in the juice of a lime and zest of the lime, for as long as you like. Fry some spring onions, finely cut strips of pepper and (optional) sliced chilli, add chicken, add tin of coconut milk, and cook through. Serve with boiled rice. MMMMM

It is a really easy 5 minute recipe, I also added some baby sweetcorn and mangetout, shredded some sspring onions on top for garnish. Mild enough for all kids!

Both sound yummy. DH would have a problem with the peppers and coconut milk....in fact sometimes its harder to find something he will fancy when he gets home than for the children!

I'm not mad on coconut, my sis asked me to make it when I was staying with her last month. I was pleasantly surprised and it isn't too coconutty. It just makes the chicken very soft. You can skip the peppers also. I think it is a Delia How to Cook recipe

Do you have any chicken or mushroom soup? if so, saute the onions and the chicken until browned and then add them and the leeks, peas, sweetcorn and some mixed herbs to the soup (and a splach of white wine if you like) to the soup. Bring to the boil and then simmer for 20 mins. Serve with rice or over baked pots. Hope that helps!

Chicken Cacciatore.

Coat chicken breast with flour and seal with hot oil. Remove from pan, add onion, chopped garlic, stir, then add thyme or basil or oregano or even mixed herbs, bay leaf, chopped red pepper, chopped carrots, stir a bit more, then add tin of tomatoes and dash of tomato puree, and dash of red wine (not necessary), salt and pepper to taste, bring to boil then put in oven dish along with chicken. Bake for a couple of hours at medium temp (about 170 deg).
