I got this one from PrincessPeaHead 3 years ago!

NORWEGIAN APPLE CAKE

2 eggs,
8oz sugar(castor).
3 3/4 oz butter
1/4 pint fullfat milk
6-7 ozs plain flour
2 tsp (rounded)baking powder
3-4 large Bramleys.

whisk eggs and sugar together till whisk leaves a trail when lifted out of the mixer. Bring to boil, just, milk with butter and stir the hot mixture into the eggs/sugar. Mix baking powder and flour and fold it in above mixture until there are no lumps. Pour mixture in large /buttered and floured pyrex (about the size of an A4 piece of paper). thickly slice peeled/quartered apples and lay carefully over the batter in overlapping lines. sprinkle with some caster sugar and bake at
gas 6 or 200C or 400F for 30minutes. Let it cool in the baking dish.

About a 3 inch deep lasagne dish is about right

I've just had a sneaky taste of that cake - its gorgeous! So soft and moist and yum.
I had to bake something to take round to a friends for a coffee afternoon. They will all be very impressed!
Cake is highly recommended.
Thanks Soupdragon and Princesspeahead!

Just had to pop in and say that I made this to devour with fellow MNers Bink and Motherinferior. Thanks for this fabulous recipe! It works a treat and is utterly delish.
