Salmon for Easter Sunday

I'm doing the Mary Berry salmon en croute with roasted veg.

Can anyone reassure me that if I buy the salmon tomorrow (Friday) it will still be fine for Sunday? My head says yes but I have a niggling worry that I should wait til Saturday - which I don't want to do.

If it's very fresh salmon that you buy and if you keep it well chilled in the fridge then it should keep for a couple of days, no problem.

Thanks. I'm planning to buy it from Tescos so hard to know how fresh it will be.

I would say not very, since it's Tesco, but then again, I suspect that a lot of supermarkets will have big deliveries (or take a load of fish out of the freezer) for tomorrow. Saturday's would probably be the same batch, anyhow.

Buy some frozen and defrost it at home.
