Lactose intolerant last minute pudding idea!

Have the hordes descending for Easter and yesterday i menu planned and DH shopped accordingly. Two main puddings (Easter Sunday and Easter Monday) are lemon tart and home made ice cream. Both healthy options are made with copious amounts of cream.

DB has just announced to me that his GF is lactose intolerant.

I'm not ditching the existing puds - (fairly expensive) ingredients already bought - although had he let me know more in advance i could have done puds that would have suited! I did suggest a nice apple would be a suitable replacement, but that was a joke (and a bit mean!).

So i'm looking for easy to prep/cook puddings avoiding dairy that could be offered as an alternative (that don't cost a fortune for ingredients!).

Suggestions much appreciated please!

Victoria sponge made with df spread ( we use pure).

I add a little extra vanilla essence because of the lack of butter.

Why not make her a lemon sorbet?
Or to save time try your local health food shop for ready made dairy free. Tesco sell dairy free icecream
