Baking with spelt flour

Does anyone have a good recipe for pastry or a Victoria sponge using spelt flour? I'm interested to try white spelt flour but wondered if anyone knows how it bakes.

thanks for that PolterGoose (luv that name). I have been told that white spelt flour is hard to come by because of a world shortage and its recent popularity so I couldn't get any. I used white gluten free flour instead and the texture was really nice.
