I'm just defrosting my small freezer. I've recently started calorie counting to try to lose some weight, and I need to use the freezer more effectively than I have. Been eating frozen prepared stuff but I'm sure I could be making lower calorie (and nicer!) stuff myself.

Looking for recipes for the protein part of a meal so I can easily boil potatoes, get salad out of a bag and combine with something defrosted so I have a load of easy, healthy meals to hand.

Can anyone suggest reasonably low calorie recipes for beef burgers, fishcakes, chicken, um, things...

I'll need some vegan things for friends too but I'll make another thread for that as it'll need to go in the title. So this one is my meaty/fishy thread, yum!

I use cooked salmon fillets, but you could use tinned salmon or cooked mackerel. I use 3 or 4 cooked and cooled salmon fillets. Add to 5 or so boiled and mashed potatoes. I add lemon juice and a couple of spoons of tartar sauce. You could use low fat mayo. I also bung in a load of fresh spinach leaves. Then I mix the whole lot in a bowl with my hands, it wants to be quite sticky when you're finished. I make patties out of the mixture and then roll each one in breadcrumbs. Then put them in the fridge for a couple of hours. You could freeze them at this point. The mixture makes about 9 big fish cakes. When ready to cook, put them in the oven for about 20 mins. A cheap family favourite in our house.

A vegan burger -
Carrot, kidney bean, cumin burger
These are lovely. I only make 3 out of the mix, not the 4 she suggests, but they freeze fine uncooked, then I just let it defrost during the day and fry it.
Nice with salad/salsa type something and in a pitta/bun

We use extra lean beef mince, clove of garlic, salt & pepper, very finely chopped onion (sometimes v finely chopped peppers too), mixed herbs & a good shake of paprika. Bind with an egg (no breadcrumbs). Really tasty.

The hairy bikers have a recipe for Mediterranean beef burgers that is 413 including a ciabatta roll. It says if you only use half a roll the calorie count is reduced to 332 per serving.

I'm on my phone so would take too long to write the recipe out but if you Google hairy dieters Mediterranean burger it should come up.

The calorie count also includes a slice of reduced fat mozzarella.

I haven't tried it yet but is on my meal plan for next weekend.
