What meat to add to butternut squash risotto?

I'm making butternut squash risotto in the slow cooker for dinner, but DP is likely to get very upset if there isn't some sort of meat element!

Any suggestions? I'm thinking maybe chorizo or pancetta? Probably added at the end.

I was going to say sausages, sliced. But chorizo sounds nice, or ham, or bacon/pancetta. You could also add something like smoked mackerel, if that counts as "meat".

I usually add chicken if I feel the need to meat as I like the combo with squash and sage

Chorizo, bacon, Parma ham - something salty to cut through the sweetness of the butternut squash. If I was adding chicken, I'd stir through a salty cheese.

Packet of cubed pancetta, (available at 'trose, sanisburys etc) sautéed with the onion at the start of the recipe. Also chopped sage is lovely, just stirred in at the end.

I used this recipe and added chorizo:

DP still wasn't impressed Sad don't think he's a risotto man. Now what to do with the rest of the arborio rice?!

I made butternut squash risotto last night! Like yours my dh thinks it should have some form of meat in it so I add pancetta. 'Twas lovely Smile

Rudy I think it's the texture he doesn't like. The awkward so and so generally doesnt like 'creamy' things. Fuss pot Smile

I do a butternut squash and sage risotto which I serve with grilled sausages, either chopped and mixed through or just on the side. Yum!
