Veg pasties

I have quite a lot of carrots/peas/potatos(all home grown!)
anyone got a recipe for veg pasties to use them up?
and can they be frozen?

I like making Jamaican curry patty. A vegetable version would be as follows:

Make up a batch of short crust pastry, add a teaspoon of turmeric to give a yellow colour. Use a saucer or bowl to make circular cuts in the dough. Let the pieces sit while you are making the filling.

Brown finely chopped onions, garlic, thyme and scotch bonnet pepper. Add chopped vegetables and a tablespoon of curry powder. Cook for about 15 minutes with stirring plus add salt for taste.
Add spoons of filling to the pre-cut dough pieces. Fold over dough to form a half-moon shape.
Use the end of a dining fork to seal the crescent edge of the patty while making a pattern.
Place the patties on a lightly greased baking sheet and brush each patty with a little oil or melted margarine.
Bake for about 30-35 minutes at 180-200 C
