Vacuum packed mackrel help

Turquoisetamborine · 10/04/2014 19:34

I've bought this several times and am ashamed to say I've given it away or chucked it each time. I have bought it again and need to cook it tomorrow. It's peppered in those vacuum packs from the chiller cabinet.

Does it need cooked or is it already cooked?

What should I do with it? We eat virtually anything.

It's already smoked, you don't need to cook it again!

We love it in this house and have it almost every week.

You can have it as it is, cold with new potatoes and salad.

Or, we do a lovely smoked mackerel dauphinoise (Nigel Slater recipe involving potatoes, cream, lots of grain mustard and flaked smoked mackerel cooked in the oven. Yummy yummy!

Or there's a nice recipe using smoked mackerel, bulgar wheat and cucumber that we often do. Sort of a warm salad.

Or use it to make smoked mackerel pate.

Thanks, I think we will try the dauphinoise, sounds lovely. Also thinking it would be good in fish pie.

We do smoked mackerel risotto. Find the baked risotto recipe on bbc good food. Replace the bacon and tomato with mackerel (dark bits removed) add fish stock made with cube). Divine.

It's quite overwhelming in a fish pie. Depends on whether you like the smoked flavour really.

I usually use it for pate, and in the summer make salad with boiled potatoes, beetroot and leaves. Or stir it through pasta with some buttered leeks.

I have it cold either in a salad or with hot mash & peas.

Yum!

smoked mackerel pate - mix it up with a bit of butter, lemon juice parsley and black pepper, and serve with crusty bread and salad

We put it under the grill for a few mins then have with rice, peas and sweet chilli sauce (on the rice). Delicious.

It's good for cheats' kedgeree as well. Or mix it up with mash and an egg and make fishcakes that cook really quickly.

Honestly it's a wonder food, cheap and keeps for ages in the fridge.
