Interesting additions to fajitas?

Need a quick and easy dinner tonight so have decided on fajitas, but wondered if anyone had any suggestions on what to add to make them more interesting? Usually we just do chicken, peppers and onions with sour cream and grated cheese on the side.

Chipotle is more smoky than spicy so add a tiny bit and see how you go. You can always cool it down with yoghurt, sour cream etc.

Red lentils are great for little ones. Quick and easy to cook. Have a Google for recipes including Annabel Karmel's 'lovely lentils'.

What about duck with some chopped coriander and mint and some pomegranate seeds
