Sugar free/low sugar pudding ideas needed

My lovely sister is coming to lunch on Easter sunday. She chooses not to eat refined sugar, or at least to eat as little of it as possible so I'm trying to think of something nice to make for pudding. In the past I've done fruit salad or sugar-free jelly set with fruit but they are both rather boring ideas and I'd like to make her something a bit more special if I can!

Any ideas? She does eat a bit of honey or Agave nectar sometimes but prefers not to.

Summer pudding works well without sugar, provided you choose sweet fruit to go in it (raspberries and strawberry a rather that black and red currants)

Baked apples with lots of nuts raisins cinnamon stuffed in a bit of honey does help this, but not essential. Cook it for longer on low with foil over to begin with otherwise it gets pretty dry.

I also sometimes do apple crumble without adding sugar. Make the crumble mid with oats, raisins and nuts.

All these can be served with marscapone (sp?) or greek yog. Or summer pud goes really nicely with homemade mango yog - whizz up ripe mango with natural yog.

Make rice pudding with coconut milk, it's sweeter than cow's milk so you can skip the sugar - lovely warm with a bit of cinnamon dusted on it or cold with mango or pineapple.
