Why is my white bread still doughy and a bit tough?

Been getting into baking bread but despite a LOT of reading up on it and following recipes to the letter(some no kneading, some double proving,etc) I still end up with weird -textured bread. As my DH put it "the texture reminds me of a crumpet".
This was in relation to my latest attempt with which I was quite proud of the "crumb" I managed to pull off, but combined with the odd texture I concede it is reminiscent of a crumpet. Sad
How do I get the gloriously fluffy soft stuff? What am I doing wrong?

I was leaving in fridge, perhaps was too long and like u say would require a reknead etc

Well, somewhat embarrassing, apparantly I have truly knackered my left arm/shoulder through my kneading attempts!
At 1.30am I was sitting up with a bag of frozen peas on my elbow and downing co-codamol. Blush The pain was ridiculous, I thought I had sprained it.

I am apparantly unfit. And getting old.

Will not be trying Lostinwales' lovely rolls just yet but definately next on my list still.

Unbelievable! A kneading injury. Clearly you have to revisit technique….maybe stop and have a cup of tea next time!

I've got a Kenwood Chef mixer because I have Stupid Arthritis and can't do much without damaging myself, I'm pretty impressed with the results but still do a few loaves by hand just because I like it.

Oh, I've longed for a kenwood chef for many a year...

A cheaper version will be on my Christmas wish list.

It's brilliant, a really lovely piece of kit, makes me so happy and means I can do a lot more cooking and baking than I've been able to recently. Got two sourdough loaves and one Pan de Campagne baking right now. Grin

My house is covered in a fine layer of flour and smells very bready Grin. Note to all you breadmakers, it's all well and good watching you tube video's of how to shape a baguette, if you don't have a very long baking tray and commercial oven you are going to end up with a very unusual shaped loaf!

I wanted a slightly less crispy version so baked at a lower temperature, about to commence taste test....

The look good though, I think.

I use a wide flat wooden paddle and keep the mixing inside a 3L polythene box with a lid.

There are others.
