Ideas for gammon shanks that don't involve pulses?

Two naice looking shanks from the farm shop currently soaking (she said they were v salty). What next? DP doesn't 'do' lentils/split peas etc.

Colcannon would go nicely, maybe with a whiskey sauce or a roux to tame the saltiness.
