I have chicken breast in the fridge ... Used all my usual ideas for a nice supper!

Does anyone have some thinsperation to make something fab ?

What are your usual recipes?

If it's for me and DH I would poach it, shred it, and do a Sichuan spicy cold chicken dish. Or a Thai salad.

In fact would probably do a Thai salad thing without the chilli to feed the kids too.

Dh doesn't so spicy food :-( but tolerates fajitas

Stuff with boursin and wrap in bacon. Yummy.

Spicy Chicken Kebabs Make a marinade with some plain yoghurt, a little oil and a Tikka spice blend, cut the chicken into chunks and mix together for half an hour. Thread onto wooden skewers with some green pepper & red onion squares and grill until cooked. Serve with some rice, cucumber dip, or salad
