Stuffed mushrooms

I went to am italian and had stuffed mushrooms.They had panchetta in and were topped with mozzarella and were sitting in a tomatoey sauce.I cant remember anything else about them.
Can someone advice me on how I can recreate these?

well the basic principal of stuffed mushrooms is the same whatever the stuffing

I would:
fry some finelyl chopped shallot and chopped pancetta in olive oil, add it to a mixture of breadcrumbs, and chopped parsley. Bind it all with a little softened butter.
Brush the mushrooms with olive oil or melted butter all over and season with salt and pepper, sit on foil on a baking sheet, stuff in the stuffing,
Place in very hot oven, 200 degrees plus, for 10 minutes, cover with foil and bake for another 5. Take off foil and sprinkle on mozzarella and then finish under the grill.
I would serve the heated tomato sauce on the plate and put mushrooms on top, merely because from the description of your dish I can't tell if the mushrooms were cooked in the sauce or not
