Surplus milk, carrots, broccoli and spuds

Seriously I have gallons of milk, enough carrots to run a stables and a bonkers amount if broccolli. And probably more spuds than we can eat, although I can mash and freeze.
Suggestions before I end up buying a rabbit it something?!

I'd freeze the milk.

Mash and freeze the potatoes

Cut up the carrots and freeze

Broccoli soup and freeze.

Don't think I've got freezer room for all of it.
Dh is away do I might just make myself a giant bowl if custard for dinner...
With carrots.

Rice pudding, potato dauphinois, carrot and chickpea salad with a leek and potato rosti. Carrot cake of course! Paneer cheese with the milk.
Broccoli, chilli and garlic pasta. Carrot Thoran. Roasted broccoli.

Boil milk and add lemon juice, separate the curds using muslin and a strainer....google for a recipe.

Rice pudding, and post it to me.

Winter veg soup, you can whiz it up very very thick and freeze, so it takes less freezer space, then add stock or onion water to thin it down at reheat time.

How do you freeze mash without water separating off it?

I just freeze my leftovers in a pot. The flavour gets tainted though, we use it as an ingredient in something with a strong flavour once it's been frozen, but in general I try not to freeze it.

You could make yogurt by boiling the milk and adding a spoon of your favourite yogurt. Then use the yogurt as dip for raw broccoli.
