I eat mostly vegan, DH is an omnivore and DC are fussy

Need a few bakes in my back pocket for weeknights that will do all of us (although happy to have non vegan recipes because I'm not strictly vegan all the time, just massively reduced my animal product consumption - and I do 5:2 so there are always nights they can have something big and I can have soup)...pref easy to assemble, chuck in the oven etc

Any thoughts? I've only ever really done pasta bakes and they just seem to be an additional step in the recipe

How about a savoury crumble. Put in root veg casserole or lentil and mushroom or tomato based stew style veg underneath and sprinkle with a topping of oats, flour, ground almonds, paprika, cumin and seasoning, blended with some vegan spread or oil oil to give it a crumbly texture.

A very student but quite nice dish is red lentil, cheese and tomato bake.

You could do a quorn, spinach and mushroom pie, using pastry made with oil.

But I'm sure some vegans will come along with better ideas!

Those are great ideas, Thankyou! Would you normally precook everything then just bung in the oven? I like the savoury crumble idea
