White fish fillets

I'm trying to eat a bit better and have been eating fish I have salmo now and again but it's quite expensive.
I buy white fish fillets (usually sainsburys basics) but I don't really know what to add to them to make them a bit more interesting to eat?
I usually put them in a foil parcel in the oven with a bit of salt and pepper

Jack Monroe has a really nice recipe for a fish tagine, it was in The Guardian, but you can still find it online Smile

For a Chinese twist add some finely chopped ginger, chopped spring onions, soy sauce and either mirin or a little cooking sherry. Serve with rice and a veg.

Spread pesto on top then breadcrumbs then bake.

Add a few peeled prawns and make a curry served with rice.

In a tomato sauce:
Make a sauce with onion,garlic,green or red peppers and tinned tomato. Season with salt, pepper and herbs if liked. Add the fish fillets either lightly cooked or raw. Wine, peeled prawns and peas may be added. Also chilli if liked.
In a 'green sauce':
Sautee gently very finely chopped onion and garlic. Cook until done but don't let it colour. Add a little flour and stir for a minute, pour in some white wine and cook a little to evaporate alcohol. Add some water or fish stock, seson wth salt and pepper and add quite a bit of fresh chopped parsley and peas. Lower heat and simmer until sauce thickens and peas are cooked. Add the fish very lightly cooked or raw. Let fish cook for a few minutes. You can add a few clams or asparagus tips and garnish with boiled egg.
Or:
Dry fillets well and season with salt and pepper. Dust with flour. Beat egg and if liked add a bit of garlic and parsley seasoning(not neccessary). Dip floured fillets in egg and immediately shallow fry in hot (not smoking) oil until golden. Serve with roasted red peppers or salad greens or chips

Mix together 2tbsp soy sauce, 1tsp five spice powder & 1tbsp runny honey. Marinate the fish in this & then bake in the mixture for 12-20 mins (depending on thickness). Lovely with salmon too.
We had this last night with stir fry veg Smile

Spinach, chips or roasted new potatoes, carrots and cheese sauce. Goes well with white fish and trout.

Ooh yes. Pan fry or steam them. Lay them on a bed of cooked spinach & cover with cheese sauce. Lovely.
