Roast beef tips please

I bought decent beef from the butcher (cost a fortune), followed Deila to the letter. Result? Hmm, tough as old boots, could hepardly cut it never mind eat it!

What am I doing wrong?

What cut of beef was it?

A short cooking time is best for beef, depending on size, about an hour.

It was 1300g and I cooked it for 30 mins at 200 then 1 hour 15 mins at about 160 then let it rest for 30 mins

I'm not sure what cut it was. I just asked for a joint of beefGrin

I like rare beef. If you do try cooking for an hour and resting for 30 mins. Top rump is a nice cut, topside and silverside need a long slow cook in a pot.

I'd say you cooked it for too long. 1.3kg I would cook for max 90 minutes, probably a bit less.

You do need to know which joint though, some are better than others.

Is your ven temp accurat?

I think oven temp us accurate. I will check next time which cut to get.

I would say get a rib of beef or a sirloin joint - expensive but amazing..
