What cakes would keep fresh for 5 days?

DD needs to bring cakes into school for a sale on Thurs. However, due to time issues we need to make them tomorrow. There's no room in the freezer. Any ideas of what we could make that would keep well until Thurs?

Carrot cake would easily keep for that long

Fruit cake, ginger cake.

Ginger cake is quite easy to make, though you may need some ingredients, like treacle, as not many people use that for anything else.

Hmm - not sure how popular ginger and fruit cake would be for primary age children (it's to sell to other kids rather than parents - I would love both)

Fruit cake, eg Dundee cake would, or Madeira cake - though both contain nuts, not sure if school would object to these?
Or could you make flapjacks?

For school cake sales, just tend to buy basics fairy cakes from supermarket, then night before open the packet and cover in icing.

Is that cheating?

Would you have time for krispie cakes on wednesday?
ie melt chocolate, stir in ricekrispise / cornflakes, dump into cases. Speilkle on something shiny if son inclined?
