What sort of side dishes for fajitas?

Dd wants fajitas at her birthday party. I rarely cook them, haven't for years. She says she'd like it where there's lots of different stuff you can pick and choose to add to your fajita.

So if I do the basic chicken fajita in sauce stuff what other stuff apart from cheese can you add to them?

Should I make my own sauce or is the El Paso stuff as good?

Peppers, onions, mushrooms, lettuce, sour cream, guacamole, salsa.
I use the El Paso or discovery seasoning have never attempted my own

Fresh salsa - diced tomatoes, red or spring onions, fresh coriander, then either peppers or chillies

Lettuce

Grated cheese

Guacamole

Sour cream

Sauteed peppers (or raw sliced ones)

Refried beans, sweetcorn.

Refried beans
Jalapeños (if they don't mind spicy food!)

VivaLeBeaver · 02/03/2014 17:31

Thanks, that's loads of ideas.

Do you reheat the refried beans?

You can do nachos to go with them. Grill them with cheese and coriander.

Inselaffe · 02/03/2014 17:34

How about different types of wraps to bulk out the selection, e.g. white and wholemeal or flavoured?

Limes to squeeze over and extra coriander to add?

I heat the beans but I don't know if you're meant to.

Earlybird · 02/03/2014 17:36

black beans good also, and personally, i prefer then to refried beans.

mexican rice also good.

Spherical · 02/03/2014 17:37

I prefer chilli kidney beans which you can buy in tins at supermarket to refried beans.

VivaLeBeaver · 02/03/2014 17:44

Nachos sounds yummy.

Will heat the refried beans and do some rice and different types of tortillas.

Have ordered a nice tortilla warmer from Amazon. Grin

I do potato wedges with ours :)

RemusLupinsBiggestGroupie · 02/03/2014 17:53

What a great idea.

I'd do - chicken fajitas / Quorn fajitas if any veggies (both with onions and peppers)

bowl of shredded lettuce

sweetcorn (shove in microwave because it's horrible cold)

grated cheese

soured cream

homemade guacamole (not that dd2 would eat that tbh)

homemade tomato salsa

some Mexican-esque rice

tortilla chips

a plate of cucumber batons, carrot sticks and cherry tomatoes

RemusLupinsBiggestGroupie · 02/03/2014 17:53

Oh and virgin margaritas! :)

somedizzywhore1804 · 02/03/2014 17:59

Don't go old El Paso- google Jamie Oliver's fajitas. They're fecking amazing. So much better than packet stuff and bloody delicious.

How about corn on the cobs with lime, chilli and some grated hard cheese over the top as a side? Delish Grin

Oooh, I have a cocktail shaker I could put to use and make some mocktails for them.

Jamie Olver recipe looks simple, think I'll have a trial run this week. Thanks.

I could make the salsa and guacamole earlier that day couldn't I?

OP posts:
Spherical · 02/03/2014 18:06

Yes, keep the avocado stone in the guacamole until ready to serve to stop it going too black.

jojane · 02/03/2014 18:08

Guacamole will go brown, think if you put the avocado stone in until ready to serve it stops it going brown

I do
Chicken, peppers. Mushrooms, onions, courgettes, carrot etc in fajita spices
Wraps
Salad
Cheese
Sour cream
Salsa
Guacamole
Chilli
Potato wedges

curiousgeorgie · 02/03/2014 18:10

We do..

Wraps & tacos

Chilli (mince)
Chicken
Aubergine
Mushrooms
Peppers
Cheese
Guacamole
Salsa
Cheese
Salad

And everyone just makes their own..

RemusLupinsBiggestGroupie · 02/03/2014 18:12

I'd mix up the rest of the guac ingredients the day before andthen mash in the avocado just before serving.
