Can anyone help.
I need to make a Rice Salad (DP volunteered me!) for a BBQ we're going to on Sunday.
There will be quite a few people there so something a little bit fancy is called for.
Any recipe suggestions apprecisted.

pesto rice salad

This is easy but lovely and goes down a treat.

Ok I don't have a 'recipe' but this is how I make it. I bought 2 packets of golden vegetable rice at Tesco, comes in a green packet. Cook it according to what is says on the packet. Let it cool, then add 1 diced red pepper, about half a cucumber diced, and a few cubes of pickle (gherkins cut up, whatever). I added a slosh of French salad dressing to mine and then put it in the fridge. The bright yellow looks great with the red and green and everyone loved it. Have fun.

I do one that is fruity and nutty in a savoury sort of way. includes slithers of toasted almonds, apricots, pineapple as well as finely diced usual stuff like cucumber, fresh herbs etc
Also do a nice one with sun dried tom, pesto and pine nuts.
Could do a cold pilau type savoury rice with saffron, almond, raisins, finely diced onion etc? Would look pretty and nice delicate flavour?
Hmmm. Got any ingredients lying around to give a starting point?

No. I will go shopping on Saturday and buy everything for the recipe.
We actually dont have much food in the house at the moment because Ive been feeling a bit rough with morning sickness. Just about all we have is a freezerful of ready meals for DP.
But I think I will be able to manage to make a rice salad - I hope so anyway!
All the suggestions sound great - it has to be pretty easy but also realy delicious.

, a middle eastern one.
You fry onions and garlic in big pan, then add pint of basmatic rice and veg stock to cover liberally, oh and add cinnamon stick and big hand ful of currants. Cook rice for 15 minutes, don't lift lid until then, then add some dry fried pine nuts and some flat leaf parsley on top. Yum Yum, its in one of her complete cookery series. Hope I am not plagarising Delia too much!

None of these sound too difficult.
Hope I feel well enough tomorrow to make one!
