Help! Has anyone got a recipe for carrot cake? Have foolishly promised my dd we would make one before checking I had a recipe and it turns out I haven't. Thanks in advance!

Thanks Lou, I was looking for something a bit more traditional (ie, baked in oven not microwave) but if I can't find anything else will try this one. At least it's quick to make! I have found some recipes on the net but was hoping to get a tried-and-tested recipe!

Harman you were right that cake is delicious! I didn't have any brown sugar or walnuts so used regular sugar and hazelnuts instead. It took much longer than 25 minutes to cook though, but I think that is my oven's fault, next time I'll set it a bit hotter.

ooh i need to make a carrot cake too............want to use this recipe but i don't have any desicated coconut and can't get it where i am so what can I use as an alternative????

harman that looks lovely, I bet the coconut really adds to the texture, do you think it would matter if I just left out the walnuts? the consistency wouldnt be affected would it?

I omitted the walnuts (would have been too tricky to get dh to buy them in german-labelled packaging! ) Did use ground hazelnuts instead but not sure they added much so would probably leave out.

Alternative recipe -VEGAN carrot cake.
500g flour
2tbs baking powder
1tsp each cinnamon nutmeg and ginger
250g margarine
250g demarara sugar (i use whatevr brown sugar I have)
500g carrots couarsly grated

prehat oven to 160 degrees c
grease and line tin (says 20cm round but I have used square)
sift flour and spices and backing powder into large bowl and mix
melt margarine and sugar in pan until sugar dissolved. remove from heat and add to flour mix together with carrots. Put into tin and cook for about 1 hour

To ice suggests lemon cream cheese and icing sugar. I don't usually bother but often add raisins to the cake too

is honestly the best carrot cake ever, AND it's low fat. It's incredibly moist, full of flavour and oh my god you've just got to try it!
