what proportions are you using for the sauce?

use better cheese - half mature cheddar half parmesan works well
cook roux properly to get rid of 'floury' taste
more salt (bad I know)
more pepper
splosh of worcestershire sauce

Also nutmeg, agree with mustard, worcester sauce and black pepper, use all these, also don't use mild cheddar, you need a strong tasting one to make it taste good.

when my friend makes macaroni cheese, she cooks the macaroni, and then layers macaroni and puts slices of tomatoe and then chees on top adds nutmeg and salt, and then bakes it, it is divine...
