Quantities for 24 fairy / cupcakes?

Do I need a 3 egg mixture to make 24 basic cupcakes, or a 4 egg recipe?

Also, what quantities of flour, sugar, butter do you recommend for 3 or 4 eggs? I thought it was 180g for 3 eggs and 225g for 4 eggs but have I got that wrong?

225g or 8oz for 4 eggs and you should easily get 24 cakes out of that - poss 36 if you are doing little fairy cakes not big cupcakes using muffin cases.

Apologies - no idea what it is in metric. Using a 4oz flour/butter/sugar + 2 eggs recipe makes 12 cakes, so would just double that.

yes, 8, 8, 8, 4.

That makes a pretty large Victoria sponge, so would comfortably make 24 fairy cakes.

You can always make some more anyway, if you haven't made enough - they only take minutes.

In metric I do 200g of everything for 4 medium eggs.

That would be more than enough for 24 cupcakes. 3 eggs plus 150 probably enough.

Thanks all - I actually did 225g with 4 large eggs and all looks good!

Best to choose no of eggs, weigh them, then match that with four, butter, sugar as egg weights are variable.

That's a great tip and I will definitely do that another time, thanks!

:) learnt from the "older ladies" at church and it's revolutionised my cooking. You replace 1/3 flour with cocoa for chocolate. Add 2tsps of coffee with hot water for coffee... etc. It's magic!

Just seen your recipe worked - ace :)

I did 3 eggs today which did 18. So would probably do 2 for 12, but as eggs vary so should the recipe.

weight is in the Shell btw :)

I would use 250g of everything and 4 eggs.
