roast chargrilled veg

i bought some frozen chargrilled veg and have just roasted them. only now i don't know what to do with them.... i used to do a feta and roast veg tart but i would like to do something different. i will make it tomorrow as we are having chicken casserole tonight.

I would heat them up and have them with your chicken casserole.

I mix them in to a tin of toms, some herbs, tomato ketchup and tomato puree and it's like the world's easiest ratatouille.

Toss them through linguine with olive oil, garlic and chilli?

I make up couscous using veggie stock and mix the chopped roasted veg through it. Sometimes with feta or halloumi cheese. Delicious with garlic roasted in the veg too.

It's tasty with roasted chicken or a steak. No potatoes needed.

I made some of my own today and am serving them to top tortilla pizzas tomorrow.
