That really. Mine just go heavy and floppy and rubbery :(

To answer my own question - a friend has just recommended whisking the egg whites. I shall try. If it works, it'll make the batter go further so quids in.

I chucked a bit if yoghurt in with milk, as I didn't have buttermilk and I didn't have the amaretto ... But came out really nice (make sure the waffle maker is really hot and don't be tempted to open it too early to check progress)
