friend for dinner tonight who is a fab cook - what do I make?

No food in house so have to go shopping. She is v. good cook - all from scratch etc.

Weather is sposed to be dry but not overly warm so prob not outdoors.

Any suggestions for something easy to make but kind of impressive.

We normally start with king prawns and chilli dip - scoff 4 platefuls and 3 bottles of wine and fall asleep!

here's delia's version

spinach and ricotta lasagne

I didn't use all those other cheeses, I just used more ricotta

most important thing is to make sure the spinach is really really dry (squeeze out the liquid) otherwise it is too mushy

I also don't remember using much of that sauce

Delia has a MARVELLOUS veggie lasagne recipe with spinach and ricotta - but it DOES take about 8 hours to prepare, will use EVERY utensil and saucepan that you own, and requires 18 sacks of spinach

But it is DELICIOUS

Get pizza delivered and make a salad. Good cooks like to eat junk food too.

TB has a good point - when I go to dinner I tend to think 'oh goodie I don't have to cook'....I wouldn't stress too much about what you cook - but keep it simple - I want to talk to whoever I'm at dinner with and not be sitting on my own as they plop jus in artful ways around a plate in the kitchen...

good idea three bob but had dinner at her house last night and had pizza and sald!!
like the idea of the lasagne.
