Things to do with cous cous please!

Ive only recently started having cous cous.
ive had cous cous with crispy bacon and veg.
What else is great with it?

Roasted peppers, chunks of grilled halloumi cheese, and chopped fried onion. (Yum.)

Soak it in fine chicken stock instead of water.

Big handful of herbs - whatever you fancy - finely chopped and mixed in.

I like little acorn or gem squash stuffed with cheese, chicken stock, cinnamon/nutmeg and dry couscous, microwave for 8 mins or roast for an hour. (Have to wait until autumn for the squashes though.)

Stir fried lamb pieces with oninons, squash and any other veg you fancy (cut up very small). Add various spices (cumin, coriander whatever you have in) - Takes about 10-15mins to cook though most of that is for the vegetables, mix in some yoghurt at the last minute and serve with cous cous.

Serve it with meatballs in tomato sauce instead of pasta - ds loves it

Dried fruit (raisins, apricots etc) and nuts (eg flaked almonds) also very good.

Fry lamb steaks. Remove from pan. Add couscous, fruit, nuts, tin of chick peas to pan, cover with hot stock, stir well,leave until you're ready to eat. Fluff, serve with lamb. Yum.

cold/luke warm as a salad with finely chopped raw onion chopped tomato and cucumber, a few sultanta and pine nuts and some cold chicken or salmon, make a balsmaic vinegar dressin with olive oil to mix in.

Couscous mixed with any dressing is better left over night as the flavours infuse into teh couscous

lashings of butter and toasted almonds, servie as carbs to go with lamb shanks or lamb curry (not very slimming though!)

it's my favorite week night stnad by when I can;t be arsed to cook - pour boiling water over couscous and leave.

Chop salad or veg and meat.

make dressing

THrow all together and eat. Yum.

we do roasted veggies - onions, peppers, mushrooms, tomatoes and herbs roasted in oven for about 20 mins. add tin of chickpeas for 10 mins and at same time prepare couscous with stock.

I saute finely chopped onion in butter with a drop of oil, add chopped peppers, peas, whatever, then add cous cous, and stir until coated in buttery juices, add stock or water, finish with chopped parsley or coriander, lemon juice and lemon rind.

Serve with roast chicken, lamb chops, fish etc. Also mix in feta sometimes. Serve with harrissa paste as condiment, yum!

Could also add flaked tuna, chick peas or other beans.

Serve with Bolognese or chilli sauce, my DD loves this too.

sweet chili sauce and lemon juice is also good used as a dressing for couscous.

we serve it like mash/pasta/rice as a carb with meaty dishes like kebabs rather than mixing the meat etc in
stirring in a good spoonful of mango chutney when you add the hot water v good.
