lamb chop recipes

I have 2 small lamb chops. Suggestions please. No mint, cream, cheese or tomatoes.

Quarter an onion, peel a few cloves of garlic, peel and dice some spuds, quarter a few peppers if you have some.

Glug of olive oil in a roasting tin, chuck all the above in with some salt and rosemary, give it all a good turnover to coat.

Stick in the oven for about 20 mins then chuck the lamb chops on top and cook for a further 20 mins.

Serve with some green veg if you have any.

Easy peasy, minimal washing up and delicious.
