My birthday is on Sunday and have just decided to have a party,I know left it a bit late.

Ideas please for food I can prepare in the morning,Quick and easy.If anyone has any recipes for bean or rice salads would be brilliant.
Also how long before should I prepare sandwiches and will they keep ok in the fridge covered with cling film?

Happy birthday for Sunday
An old trick from my dad - when you put sandwiches in the fridge, cover them with lettuce leaves and then clingfilm - stops them going soggy or gooey - have no idea why - even on picnics our sandwiches were always wrapped in lettuce.
Pasta salad can be made the night before and then just add the dressing before serving -

  • ccok pasta as usual and leave to cool
  • add sweetcorn, sliced cold meat, spring onion, tuna or whatever else you fancy and add to pasta -- dressing is mayo, Lea and Perrins a touch of lemon juice and a dash of tabasco if you fancy - fiddle to taste and stir in at the last minute.
  • you could also do a gammon over the weekend and then serve it cold with the salads and the sandwiches
  • slices of watermelon and lemon sorbet would work as a "help yourself" dessert.

Also crackers with philly and pesto, or philly and mango chutney make nice nibbles.
