I'm cooking some salmon tonight and have a huge bag of couscous in the cupboard. DP always finds couscous 'boring' so is there any way I can jazz it up a bit and make it nice and tasty? I'm currently following the 5:2 plan and today is a lower calorie day so ideally need a recipe that doesn't add too many cals. I've got loads of spices in the cupboard and other basics in the fridge (chilli, lemon juice etc) so hopefully should have in whatever I need.

Any ideas?

we all quite like lemony cous cous...

I sweat an onion, maybe some peppers, but of celery, add the spices that you like, however much stock you need, plenty of S&P, squeeze of lemon

sometimes i hurl in something fruity...raisins/dates/apricots...let the stock come up to the boil and then add the couscous, stir it all through, clamp on the lid and leave it to sit.

Splidge of lemony oily dressing over it and fork it up before serving.

I have some raisins in the cupboard, never thought of that!
