Quick and easy veggie recipes

So, I seem to have lost all culinary inspiration. I'm vegetarian and am looking for some quick (no more than 20-30 min total preparation and cooking time) recipes. The problem is that I'm only cooking for me and I live in a student house with very limited fridge space, and no freezer, so it's hard to store ingredients/extra portions (I can maybe store a couple of extra portions in the fridge, but no more than that). I like making soup but often don't have time, and need more variety in my diet.

If anyone could suggest some veggie recipes I'd be really grateful.

Hi,

thanks RemusLupin. I really like the idea of a chickpea curry (and I have tinned chickpeas hiding at the back of my cupboard). A lot of the recipes I've seen have coconut milk, but do you think I could use normal milk instead (or soy/almond milk)?

Just leave it out and add a bit more liquid, or tinned tomatoes if you like them, or a bit of cream or natural yoghurt (but add this at the last minute and don't overheat it).

Veg omelette/frittata?

Cashew nut/omelette strips stir fry

Risotto, I like leek & cannellini bean with a little dusting of cheese at the end.

Quick bean chilli with rice/jacket potato/flatbread

Vegetable fahitas/refried beans type thing with some salsa/mayo/sour cream/guacamole/cheese as you prefer

Ooh I'm marking my place for later as I need inspiration too!

I recently bought a Quorn cookbook with vouchers from quorn packets. It's brilliant - last night we had the quorn mushroom stroganoff - it was SO easy, and delicious! I'll copy out the recipe for you if you like Quorn?

Chilli. Fry onion, green pepper and mushrooms til softened. Add tin tomatoes, tin of k beans, some dried chilli flakes and simmer for 30 mins. Serve with rice, or jacket potatoes.

Sweet potato curry. Fry onion, mushrooms, red pepper and cubed sweet potato until softened. Add tblspn curry paste, coat all the veg, add stock until you have a thickish sauce. Simmer 30 mins or until sweet potato soft. Add chickpeas if you wish too. Serve with mango chutney, yoghurt and nan bread. Or rice.

Bean pot. Layer baked beans with sliced tomatoes and onion in a casserole. Tear up chunks of bread and add to the too with grated cheese. Bake 20 mins until topping is crusty. Serve with garlic bread or pots.
