I use a lot of quorn, although I realize this is still expensive. I can't eat beans or pulses, so I need to find my protein elsewhere.
Made a gorgeous veggie lasagne the other day using quorn mince, it was delicious. DP (not veggie) said he wouldn't have known it was veggie if I hadn't told him. If you want to save on money, you could easily omit the quorn and add some roasted veg.
The marinated tofu pieces in tescos are really good in stir fry, green curry etc. Non marinated tofu needs a bit of extra attention before it's nice.
Veggie sausage casserole is a favourite in our house.
I've just discovered Baked sweet potato. Had one with a pile of home made guacamole (just mashed avocado with garlic), chopped red peppers, spring onions and a handful of watercress salad the other night. It was divine.
Ooh and Sweet potato wedges. Delicious.
Veggie frittata - any veg you like, onion, courgette, peppers, thinly sliced potato, fried up then bung on 4 whisked eggs, fry for a bit, put some cheese on top and under the grill. Serve with salad. Lush.
My fave easy meal is enchiladas. The kits are really cheap, just add some peppers, kidney beans if you like, mushrooms, onions, fry up with the passata for the filling. More passata on top, cheese, bake. YUM!
