Leftover roast pork

What to do with it? Other than stuff it into sandwiches...

How about a Pork and Noodle Stir-fry? Shred some of the cooked pork and set aside. Cook the noodles according to the packet instructions, drain and then sprinkle on a little sesame oil to stop them sticking. Slice some spring onions, a little root ginger, a clove of garlic and get them going in a little oil. Then add some finely sliced carrots and a red pepper cut into a large-ish dice. When the vegetables are softened, turn down the heat & add the cooked pork and a sachet of commercial sweet and sour sauce. Finally stir through the reserved noodles.

Stir fry or fried rice - it's perfect!

Chop it roughly and mix it with cooked rice, finely chopped ginger and some passata, chopped coriander if you have some, and use it as a stuffing for peppers.

We're having this tonight - cube left over pork and fry in a little bit of oil. Add chopped onions, mushrooms and apple. Stir fry it all until cooked. Add some grainy mustard and soured cream to make a sauce. Serve with rice. Delicious!

Have heated it in a hot oven to crisp it and the shredded it and had it with cucumber and hoisin sauce like crispy duck.

The pork had been braised and then roasted to crisp the crackling so the meat was fairly soft.
