Freezing/defrosting double cream

I put about half a tub of extra thick double cream in the freezer at Christmas. I got it out today to have with some mince pies (yup, still eating up the leftovers!) and put it in the fridge to defrost.

It is defrosted but the texture is really grainy....not pleasant. Is there anything I can do to rescue it, or is it beyond redemption?

I've never managed it, always goes grainy, like you say. Would be interested to hear if anyone has a solution!

I think it has to be whipped to freeze it, but never tried it

I've only managed this with clotted. Probably the high fat content.

Meh, ended up throwing it away. Sad
I do have some clotted cream in the freezer too, so I'm hopeful that'll turn out nice!
