How do you make your own veggie nuggets?

DD has recently turned veggie and I need ideas! What veg do you use? Do you use ready made bread crumbs? what do you fry them in and for how long?

I make a beanburger mix that could be adapted to become a veggie nugget.

6oz chickpeas, drained
1 egg, beaten
1/2 onion, finely chopped and browned
1/2 carrot, grated
2oz peas, defrosted
2 tablespoons oats
seasoning, herbs, spices to taste
Breadcrumbs or cornmeal to coat

  • Crush the chickpeas and mix well with the other ingredients except the breadcrumbs
  • Set aside for 30 minutes so that the egg is absorbed
  • With wet hands, form into nuggets, roll in cornmeal/breadcrumbs and shallow fry until golden.

BTW... for home-made breadcrumbs I take old bread crusts (kept in the freezer for the purpose) cut into chunks and then bake on the lowest setting in the oven for 2 hours. Leave overnight to fully dry in the oven. Then blitz in the Magimix until fine. They keep in an airtight jar for weeks.
