What sauce can I make for salmon fillets that takes about 5 mins? Something like a plain butter sauce would be fine.

Have also got new pots and steamed veg to go with the fish.

Thanks

LEMON MUSTARD SAUCE:

Water
1 tbsp. butter
1 tbsp. flour
1/4 tsp. salt
Generous dash pepper
1/4 c. mayonnaise
Grated peel of 1/2 fresh lemon
1/2 tsp. prepared mustard

Add water to reserved salmon liquid to equal 3/4 cup. In small saucepan, melt butter; stir in flour, salt and pepper. Gradually blend in liquid. Cook over medium heat, stirring until thickened. Remove from heat; blend in mayonnaise, lemon peel and mustard.

LEMON-PARSLEY SAUCE:

1/2 c. butter
1 tbsp. fresh lemon juice
1 sm. garlic clove, mashed
1/4 c. chopped fresh parsley

Melt the butter in a small saucepan and stir in the lemon juice, garlic and parsley. Blend well and stir over low heat for several minutes.

I like:

1 cup whole milk
1/2 cup cream
100g cheddar
chopped fresh parsley
black pepper

Bung everything except the cheese into a milk pan and bring to the boil gently, then turn down to simmer, add cheese gradually until it's melted in.

Pour over salmon/flake salmon into sauce.

Lovely with tagliatelli.

CUCUMBER SAUCE:

1/2 c. sour cream
1/2 c. finely chopped cucumber
2 tbsp. chopped onion
1/2 tsp. dill

HOLLANDAISE SAUCE:

2 slightly beaten egg yolks
2-3 tbsp. lemon juice
1/4 lb. butter
1/8 tsp. cayenne pepper
1/4 tsp. oregano seasoning

HOLLANDAISE SAUCE: Place ingredients in saucepan. Cook over low heat, stirring constantly until butter melts and sauce becomes slightly thickened

Carmenere · 28/07/2006 19:49

Instead of lemon use lime zest and juice, brilliant with salmon!

boxthefox · 30/03/2018 18:21

I cheated today, not that I care, and picked up a little jar of Hollandaise sauce in Aldi. Shock horror, NOT made by my own little hands!

To everyone's surprise it was really nice.

Anyway that is probably not helping OP. If you want quick and easy right now, I would echo the post by Carmenere above, melted butter with pepper and lemon juice. It is lovely and so quick!

Allioli amb Ous

Garlic: 4 cloves
Salt:to taste
Olive oil: extra virgin
Eggs: 1 whole egg
Lemon juice: ½ squeezed lemon

Method:
Use a blender stick with the plastic jar that fits its head
Make a garlic paste with it
Add the yolk and the egg
Zap for seconds until paste-like
Pour gently, a slow steady stream of oil and make an emulsion while keeping the stick going
Add salt near the end
It should become thick and yellowish.
There are some who add saffron and its water - try it but it isn't necessary.
