I use jarred tikka paste and put it in a really hot oven. That isn't what you were after, is it?

I use tikka powder, garlic, ginger and yoghurt and cook in the oven. You could use all the individual spices but I like the easy option! Grin

Make a paste of:
1 garlic clove, crushed
half tsp ginger
half tsp cayenne
1 tsp coriander leaf
pinch chili seeds
1 tsp lemon juice
4 floz youghurt

Cut chicken into bite-sized pieces and marinade in paste overnight.

Next day, gently fry:
1 onion, chunked
1 pepper, chunked
half tsp cumin
half tsp ground coriander
half tsp turmeric.

Add a tin of tomatoes and bubble for 20 min.
Meanwhile, cook chicken (grill or 10 min on gas 7).
Add to sauce, with another 4 floz of yoghurt.

I do something similar to the above....

  1. Roast off the following in a dry frying pan until toasted
2 tsp cumin seeds 1 tsp coriander seeds 1 tsp mustard seeds 1 tsp fenugreek seeds then grind in a pestle and mortar
  1. Add to two tablespoons plain yogurt, the juice of half a lemon, 1 tsp ground turmeric, 1/2 tsp dried chilli flakes, plenty of salt, crushed garlic, finely chopped root ginger. (Plus a drop of red food colouring if you want the classic orange appearance)
  2. Dice 3 chicken breasts into large chunks and marinade in this mixture overnight
  3. Thread the chicken onto skewers and grill under a high heat until charred and cooked through.
