Pulled pork and...

What?

DH fancies pulled shoulder of pork and as he has a broken ankle I am taking pity and catering to this particular whim.

But what to serve with it? Was thinking corn on the cob and coleslaw, but now I fancy making a fresh apple sauce too and not sure it goes. Think it'll also need something carby.

Any suggestions?

we have it on big soft rolls, or crusty french stick. Nice wodge of salad, I like potato salad too, kids and dh like chips or wedges

I would do some crusty baps or pittas with the coleslaw and corn.

Ooh, a sandwich theme, interesting...

Maybe wraps with an Asian twist. I'm thinking along crispy duck and pancakes lines with crunchy cucumber, spring onions, chillis (he's a chilli nut) and some kind of sauce...

Reckon that's work?

I do my pulled pork in slider buns with American cheese and homemade tomato relish.

Apple sauce would work well too.

I make corn and slaw but it rarely gets eaten as everyone is too stuffed from the sliders!

Whack it in a hot oven for an hour and a half, then low and slow for four hours or so with the occasional baste. Should end up with crispy crackling and beautiful moist meat. Yay, roll on tomorrow!

We serve it with homemade BBQ sauce, salad and toasted pittas. My mouth is watering just thinking about it Grin.

BBQ Sauce recipe in case anyone wants it - takes a while to make though (30 mins or so)

300ml cola
150ml passata
1tbs honey
2tbs Worcestershire sauce
1/2tsp ground cumin
15g butter
1/2tsp smoked paprika

Put all the ingredients in a saucepan.
Boil then simmer on a low heat, uncovered for 15 minutes or until thick - the mixture should leave a trail on the surface when lifted with a spoon.

Keep for up to 5 days in a screw top jar in the fridge.

We always have it in crusty rolls with corn on the cob on the side. DP has coleslaw with his but I'm not a fan. I've also made chips before but no-one eats them because they're so full up from the bread.

I do it mixed with fusilli and red onion. with cheese sprinkled on
