any substitute for stilton?

We are looking to expand our meals for our hard to feed family (dc1 doesn't like anything remotely spicy or saucy (eg casserole), dc2 dairy intolerant, dc3 weaning the lazy way).

Anyway have just come across a Jamie Oliver recipe for pork chops wrapped in prosciutto with apple and stilton. Now dc2 can't have that, dc1 won't, and I'm not keen on blue cheese. What would work instead of stilton do you think?

Also, any recommendations for websites / books with some nice meals for difficult families? Cooking from scratch ok, but the quicker the better really got midweek.

would they eat boursin (soft cheese with herbs), or goats cheese? both would be delicious

Goats cheese, yes. Thank you! Dc2 can manage goaty things so that would be perfect. We are so in a food rut it will be good to try some new things.

Stilton does lose a lot of its tang when cooked.
