Fresh Ginger - help i have accidently ordered 11 packs of fresh ginger - what do i do with it?

Usually they will take it back - I did this once with overn chips got 11 packets they took the other 10 back with them

Ainsley Harriott has just said you can freeze it and grate a bit off when you need it. Put is straight back in the freezer when you have finished otherwise it will go like a sponge. He's on Ready Steady Cook at the moment.
