making salmon gravadlax

hi

i made a cure for making salmon gravadlax on tuesday thinking i would buy some salmon on wednesday to use it,to cut a long story short i still haven't been able to get hold of some salmon, if i can buy some today or tomorrow can i still use it?

the recipe was roughly equal amounts rock salt, sugar, dill and some fennel seeds

or if i need to make a new one can i use frozen dill?

If it is dry it will be fine. The salt will preserve everything.

So I made my salmon gravadlax on Sunday and I've had such a crazy week that I only turned it once in that time and it's still curing as we speak... Is it safe to eat? I'm presuming BC it's still in the salt it will be OK but am I being silly??

It will be fine. I cured my Christmas gravadlax from 21st to 25th and the leftovers were still fine on 28th. The cure is pretty miraculous

Well I thought I'd report back... My gravadlax was too salty Sad we had to chuck it Sad I guess next time I will have to make it in a week when I'm less busy so I can give it due care and attention!
