When you make an apple pie, should you put pastry on the bottom as well as the top? And if so, do you blind bake the bottom pastry first?

Yes and yes. Only one layer of pastry = not a pie IMO.

Thanks, have since found a couple of recipes, they don't mention blind baking. How long should I blind bake for?

I never bake an apple pie blind but do use an enamel pie dish which ensures the bottom is cooked. Agree that pie is pastry top and bottom, pastry on bottom only is a tart. However sometimes people put pastry on top only to cut down the calories.
