Come and tell me what to do with persimmons

DH brought home 4 from the supermarket. I'm not sure if he thought they were tomatoes or if he fell victim to some sort of bogof.

Anyway does anyone have any ideas?

There was recently a recipe in the Guardian or Observer for a cake with them in. I couldn't quickly find the link to that but did find this:

What was that salad like? It sounded delicious and I copied it down into my recipe note book. Never thought of using mint before.

I have a chocolate mint plant and the leaves can be infused in a sugar syrup to make lovely ice cream sauces. So wondering whether to add some Persimmons to it too?
