I can never be arsed to make a big one as it always collapses - we cut circles of bread with a big cutter, dip them in the fruit, put in bottom of ramekins, add fruit, top with more dipped bread circles, clingfilm the top, stack them (so each one is weighted by the ramekin on top) and chill.
Then you can choose if you want to turn them out or (if that looks too tricky) serve in the ramekins.
