Quick shortbread question!

Hello, hoping you can help.

Not baking for a special occasion only to occupy me before returning to work tmrw - so bake doesn't have to be perfect!

But, shortbread recipe needs 225g butter. Only have 125g butter. Could I replace final 100g with Lurpac Spreadable Lighter?!

Would result be inedible?!

Thanks!

It will be ok Smile
All butter would be optimally delicious, but a small half of 'spread'in the recipe will definitely be fine!

But surely "lighter" has less fat and the result will be dry and crumbly?

With 125g butter, use 180g flour and 55g sugar.
dont use marge or anything. Its foul.

I made lemon shortbread at xmas. If you have a lemon or lime you could grate in and add a drop of juice.

bloody gorgeous.

Thank you all. It's for Jo Wheatley's Orange & Pistachio Shortbread. Not heard of citrus fruit in shortbread before but had pistachios left over from Christmas. Will halve mixture and let you know how I get on. Thanks again!

Neither had I before I looked at the lemons and thought what's the worst that could happen... Grin

It is quite likely to be horrible and /or greasy.
Half the recipe, and make less than originally intended.

Thanks all - I made them with half the mixture and they were.... Delicious! And all gone. Smile
