Quick shortbread question!

Hello, hoping you can help.

Not baking for a special occasion only to occupy me before returning to work tmrw - so bake doesn't have to be perfect!

But, shortbread recipe needs 225g butter. Only have 125g butter. Could I replace final 100g with Lurpac Spreadable Lighter?!

Would result be inedible?!

Hmmmm. You want the butter to solidify before baking, so you usually put it in the fridge to rest for some time before baking it, and spreadable in such a big quantity might hinder that.

Can you half the recipe and put in a smalle tin?

You could make a sponge cake with a mix of the two, though.

i wouldn't use any "lighter" spread for any baking tbh...it's usually whipped up with water and that's where everything starts to go wrong.
